{"id":104770,"date":"2022-04-11T12:03:12","date_gmt":"2022-04-11T10:03:12","guid":{"rendered":"https:\/\/www.trait-tendance.com\/actualites\/pide-dagneau\/"},"modified":"2022-04-11T12:03:12","modified_gmt":"2022-04-11T10:03:12","slug":"pide-dagneau","status":"publish","type":"post","link":"https:\/\/www.trait-tendance.com\/en\/pide-dagneau\/","title":{"rendered":"Pide d&#8217;agneau"},"content":{"rendered":"<p>Ingredients for 6 pides :  <\/p>\n<p>For the dough :<br \/>\n500g flour<br \/>\n300ml water<br \/>\n20g Jean-Yves Bordier butter<br \/>\n1 sachet baking powder<br \/>\n1 pinch salt<br \/>\n2 pinches sugar<\/p>\n<p>For toping :<br \/>\nleftover Maison Conquet leg of lamb confit<br \/>\n300g Terra Candido Scamorza or Jean-Yves Bordier Cheddar type cheese<br \/>\n4 tablespoons tomato coulis<br \/>\n1 bunch mint<br \/>\n1 handful pine nuts<br \/>\n10cl Kalios olive oil<br \/>\n1\/2 clove garlic<br \/>\n100g fresh Terroir d&#8217;Avenir peas<br \/>\nSalt and freshly ground pepper<\/p>\n<p>Recipe:<\/p>\n<p>Start by preparing the dough.  <\/p>\n<p>Dilute the yeast in 2 tablespoons of water and leave to stand for 15\/20 minutes.  <\/p>\n<p>Pour the flour into a large bowl and make a well. Pour in the yeast, sugar and butter. Pour the salt over the edge (it must not come into contact with the yeast during mixing).<br \/>\nMix in the bowl, then knead by hand on a work surface with floured hands.<br \/>\nCut the dough into 6 pieces and shape each into a ball. Leave to rest in a floured dish, covered with a tea towel, for 1 to 3 hours.  <\/p>\n<p>While the dough is rising, boil the peas.  <\/p>\n<p>Prepare the mint pesto.  <\/p>\n<p>Rinse mint and remove leaves. Place the mint leaves, pine nuts, grated garlic, salt and pepper in a chopper. Crush with a pestle, drizzling in the olive oil until smooth.  <\/p>\n<p>When the dough pieces have risen, preheat the oven without fan heat, thermostat 240\u00b0C.<br \/>\nLightly knead the dough pieces, then roll them out lengthwise on baking parchment. Grate and arrange the cheese lengthwise, concentrating on the center. Roll up the edges to form a pide shape.  <\/p>\n<p>Place the pides at the bottom of the oven while the cheese melts. Remove from oven and set aside.<\/p>\n<p>Shred remaining leg of lamb. Add tomato coulis and peas.<br \/>\nSpread this mixture over the pides, sprinkle with cheese and place on top of the oven until the pides are golden brown.  <\/p>\n<p>Serve with mint pesto and a few drops of lemon.  <\/p>\n<p>Any other recipe ideas?
