Caprese asparagus salad

Ingredients for 2 plates:
– 1 bunch Terroirs d’Avenir green asparagus
– 4 beautiful Terroirs d’Avenir tomatoes
– 1 Terra Candido burrata
– 100g Terroirs d’Avenir strawberries
– 1 bunch basil
Kalios olive oil
– Balsamic vinegar
– Salt and freshly ground pepper

Recipe:
– Wash the asparagus and cut off the hard tips.
– Bring a pan of water to the boil, then plunge in the asparagus for 5 minutes. Asparagus should be half-cooked. Rinse in cold water and drain.
– Cut strawberries and tomatoes into small quarters. Combine in a salad bowl and season with a drizzle of olive oil, a dash of vinegar, salt and pepper. Add basil leaves.
– Heat a knob of butter in a frying pan and fry the asparagus for 2 minutes. Season with salt and pepper.
– Arrange all the ingredients on plates, add a small slice of toast, and you’re ready to go!
