Earl Grey chocolate mousse

Ingredients (serves 4) :
– 200g dark chocolate
– 50g caster sugar
– 50g semi-salted butter
– 8 egg whites
– 4 egg yolks
– 3g Earl Grey tea powder

Recipe:
– Break the chocolate into small pieces and melt over a bain-marie. Remove from heat and add butter and tea. Mix well, then stir in the egg yolks.
– Using an electric mixer, beat the egg whites with the sugar until stiff.
– Pour two large tablespoons of egg whites into the melted chocolate and mix with a spatula. Pour the chocolate back into the remaining egg whites. Mix gently until smooth and frothy.
– Place the mousse in the refrigerator for at least 3 hours. Enjoy with Earl Grey tea!
