Vegetable skewers with rosemary

Ingredients (serves 4) :
– 12 cherry tomatoes
– 2 zucchinis
– 2 yellow peppers
– 2 red onions
Or according to taste: broccoli, button mushrooms, aubergines….
– 2 lemons
– 15cl olive oil
– 1 teaspoon soy sauce
– bouquet of parsley, basil and rosemary
– salt and freshly ground pepper

Recipe:
– Wash tomatoes, zucchinis and peppers. Peel onions. Cut onions, zucchini and peppers (drained) into chunks.
– Rinse herbs before chopping. Place in a bowl, add soy sauce, lemon juice, salt, pepper and olive oil. Blend.
– Prick and thread the vegetables onto picks, interspersing them. Place skewers in a shallow dish and drizzle with sauce. Set aside for 30 minutes.
– Drain skewers. Cook for 10 minutes on a grill or barbecue, turning regularly. Serve with marinade sauce.
