New Fall 2024 culinary collection

Gastronomic, sustainable and bold: discover the first images of our autumn menu!

For this new season, our Culinary Design & Creation department has chosen to honor fish from sustainable fisheries, recommended by Mr.Goodfish, as well as the first autumn vegetables grown in the fields of our partner producers:

  • Mini mushroom and ricotta tartlet
  • Perfect quail egg with morels and oyster mushrooms
  • Sea bass and first root vegetables
  • Sweet potato emulsion, almond, hazelnut and tonka foam
  • Label Rouge salmon steak, potato rosette, iodized butter Le Beurre bordier
  • Arctic char with coffee, onions and butternut
  • Butternut roll with smoked duck breast from Les Fermes d’Alice
