Spring rolls

Ingredients (serves 4) : 
– 4 sheets rice paste
– 2 carrots
– 1 red and 1 green bell pepper
– 1 black radish
– a few lettuce leaves
– 1 bunch coriander
– soy sauce
– salt and pepper

Recipe: 
– Peel and wash carrots and black radish. Grate coarsely. Open and seed the peppers, and cut into strips. Blanch for 2 minutes in boiling water. Drain and leave to cool. 
– Rinse and remove the leaves from the coriander. Add to vegetables. Season with salt, pepper, soy sauce and stir. 
– Moisten rice paste sheets. Roll the vegetables in a lettuce leaf, then roll the filled lettuce leaf in a rice leaf. Leave a border of about 2 cm. Fold in the sides. Serve immediately.
