In Paris, the Elenac patisserie is working to revive this regional product and (re)introduce it to a more urban audience. Elenac canelés are made with local, ultra-fresh produce, and come in a range of recipes: with Clément rum, Madagascar vanilla, coffee, chocolate… or in vegan versions. The most Parisian of canelés is still the talk of the town!
